Herb Roasted Potatoes

Ingredients

1/3 cup Dijon Mustard

2 tablespoons olive oil
1 clove garlic, finely chopped
1/2 teaspoon dried Italian seasoning
6 medium red-skinned potatoes (2 pounds), cleaned and cut into chunks

Directions

Mix all ingredients except potatoes in small bowl.

Place potatoes in greased 13x9x2-inch baking pan; pour mustard mixture over and toss.

Bake at 425F for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally.

Makes 6 servings
