Daikon Saute

This elegant root is a staple of Asian meals. It contains the enzyme diastase, which aids in the digestion of starchy foods-perfect for accompanying rice or other starches. Look for smooth-skinned daikon, with a pearly white sheen. Avoid those with flat color; they are not as fresh. Refrigerate daikon tightly wrapped in plastic wrap. Daikon is simple to prepare. Simply scrub with a brush and slice, dice or grate.

Ingredients

3 cucumbers, quartered and cut into 1 inch pieces

2 Tbsp cider vinegar
2 tsp margarine
1 lb. daikon, cut into large chunks
1 Tbsp lemon juice

Fresh mint (optional)

Directions

Combine cucumbers, daikon and vinegar in a bowl. Toss and allow to stand for 30 minutes. Drain. Cook vegetables in margarine over medium-high heat for about 5 minutes. Vegetables should be tender, but still crisp.

Sprinkle with lemon juice and serve. Garnish with mint leaves, if desired.
