Spicy Gingerbread

Spicy gingerbread is a luscious ending for a Christmas holiday party.  When you bake this dessert in a ring mold, you can serve the ice cream from a crock placed inside the ring.  Everyone will love it!

Ingredients

1/2 cup vegetable shortening

1/2 cup granulated sugar
1 egg
2 1/2 cups all purpose flour
1 tsp baking powder
1 tsp ground ginger
1 tsp ground allspice
1 tsp ground cloves
1 tsp ground cinnamon
1/2 tsp salt
1 cup molasses
1 cup boiling water

2 tbsp grated orange rind
lemon custard ice cream to serve

Directions

In a large mixing bowl, cream shortening and sugar until well blended.  Add egg and beat. Sift flour, baking powder, ginger, allspice, cloves, cinnamon, and salt, add to creamed mixture blending well.

Add molasses, water and orange rind, stir just enough to blend ingredients.

Pour into a greased and floured 10 inch ring mold or a a 9×13 inch baking pan.

Bake in a preheated 375F oven for 30 minutes.  Cool before unmolding.

Serve with lemon custard ice cream

Makes 12 servings
