Roasted Garlic Puree

Pick heads that are firm to the touch. Do not buy garlic that has green growth. Buy loose heads, if available. Do not refrigerate garlic, but place in a cool, dry place. Remove cloves from head. Press a garlic clove with the flat side of a knife blade to loosen skin. Garlic is strongest when its oils are released through cutting.

Ingredients

4 heads garlic

1/4 tsp salt
1 Tbsp olive oil
1/4 tsp pepper
1 Tbsp fresh lemon juice

Directions

Preheat oven to 350F.

Slice the bottom off heads of garlic to loosen cloves. Leave skins intact.

Press garlic from skins and place in food processor. Add lemon juice, salt and pepper. Process until smooth.

Spread this mild puree on toasted French bread, baked potatoes or grilled chicken.
